Baked Goods Color Measurement

The aroma of fresh baked goods fused with visually appealing colors can create a memorable and lasting impression. The golden bronze allure of a loaf of baked butter wheat bread, the enticing walnut hues of tasty chocolate chip cookies, or the sandy tones of a crisp salted wheat cracker, all indicate a measure of quality and flavor consumers have come to expect. HunterLab specializes in helping the world’s largest baked goods producers consistently manage the color of their products to meet the quality standards of their demanding customers.

HunterLab was the first company to receive USDA approval for the instrumental evaluation of food color, and many of the world’s top producers of baked goods rely on HunterLab solutions for color quality control of their products, including Kraft, Kelloggs, Keebler, General Mills, Entenmanns, Stroehmann, Bremners, Arnolds, Frito-Lay, George Weston Bakeries and Mondelez.

The importance of measuring the color of baked goods is to quantify the color to that of visual human perception, ensuring that the color will meet with the expectations of the consumer. The preferred measurement technique is to employ a Directional 45°/0° reflectance instrument. This is the geometry that most closely matches how the human eye sees color.

While many of HunterLab’s spectrophotometers are versatile enough to accommodate most applications of color measurement, based on 60+ years of experience and a thorough understanding of our customers’ needs and product use, these particular instruments are most suited for this industries application.
